Mint Chocolate Energy Balls

These Mint Chocolate Energy Balls are made with cashews and almonds and sweetened with fiber rich dates.  They make a great on the go snack or a healthy bite to satisfy your sweet tooth.

  • 1 cup soft Medjool dates pitted
  • 1 cup raw almonds
  • 1/2 cup raw cashews
  • 1/4 cup cocoa powder
  • 1 tsp. peppermint extract
  • 1/2 cup chocolate chips (optional)


  1. Add the cashews and almonds to a food processor outfitted with an S blade.  Process until the nuts are finely ground.
  2. Add remaining ingredients and continue processing until a sticky dough is formed.  It may take a couple minutes so be patient.
  3. Line a baking sheet with parchment paper.  Scoop the dough and form the balls rolling them in your hands to get dough packed together tightly.  You can use a tablespoon measuring spoon to help keep them about the same size.  Place the balls on the parchment paper and add them to your fridge to allow them to set for about 30 minutes.

  4. Store energy balls in an airtight container in the fridge for up to a week and enjoy!
