Tahini Lemon Dressing (Gluten Free & Vegan)
This dressing is kind of an obsession. For real. I have long been a lover of mediterranean cuisine…a bonafide hummus-ophile if you will. When I began making my own hummus and found out tahini was a main ingredient, I knew it was time to start fooling around with the stuff.
Making the rounds at local Mediterranean restaurants, my favorite dishes were always that ones that came with tahini lemon sauce. Sure the meatballs, or lamb kabobs, or whatever they were serving were good… but the sauce was where it was at. I’d have a taste and be hooked, wishing it were socially appropriate to guzzle a gallon then and there on the spot. It was then I knew I needed to start making the stuff at home. 😉
Many people trying to eat healthier get scared away from the idea of adding too much dressing to their salads. With tahini lemon dressing, that is not a problem! The tahini leaves the dressing packed full of healthy fats and plant based protein, the lemon juice alkalizes your body, and the fresh garlic gives your immune system a boost. You can drench that salad on down without a smidge of guilt.
Tahini is a butter made from ground sesame seeds (much like peanut butter). It is traditionally used in Middle Eastern cuisine, but is versatile and can be used as a nut butter substitute for those with nut allergies. It packs 2.5 grams of protein in a single tablespoon and adds a creamy flavor and texture to dishes. As someone who has been dairy free for maaaany years, tahini can sometimes fool me into thinking I am getting my dairy fix…without the disastrous repercussions real dairy has on my belly.
I make this dressing all the time. It’s my go to salad dressing, but I have also used it as a dipping sauce for meatballs, dip for raw veggies, and used it to jazz up cauliflower tabbouleh. I affectionately refer to tahini lemon dressing as liquid crack, because the stuff is downright addictive. Don’t say I didn’t warn ya. Enjoy! 😋
Note: To make this dressing into more of a sauce for things like dipping meatballs, kebabs, etc. simply use a little less water.
