Trying to clean up your diet but still want to satisfy that sweet tooth? These Mint Chocolate Energy Balls may be just what you’re looking for.  Sweetened with fiber rich dates, these energy balls are packed with nutrition while still tasting like an indulgent treat.

The inspiration for these energy balls came from Larabar Bites.  Ever tried them?? Whoa nelly, the little guys are addictive.  Hence the reason I decided to recreate them at home.  Sometimes that little bag just ain’t enough…😉

The Larabar bites come in 6 different flavors, but the Mint Chocolate Chip flavor has always been my fave.  I have been a huge fan of them for a while, but they can be pretty pricey.  So why not make them at home instead? Save your self some moolah and get way more mint chocolate yum.

These Mint Chocolate Energy Balls would make a great sweet treat to have for dessert. They would also make a great on the go snack.  Each ball has just under 3 grams of protein, 2 grams of fiber, and 8 grams of sugar (at least if you’re not adding chocolate chips).  Keep in mind though that the fiber content would prevent your blood sugar from taking a nasty spike like with most traditional desserts.

I like to make these balls with Enjoy Life mini chocolate chips to add some fun texture, but they are perfectly yummy without them as well.  Enjoy Life chips are usually my go to chocolate chips since they are free of the most common allergens.  They do have some sugar in them, so if you are avoiding refined sugar for now, just nix the chips or track down some chips sweetened with coconut sugar.

Alright, ready to get the ball rolling? 😊😊 Sorry, couldn’t resist.  Here’s what ya need…

Ingredients:mint chocolate energy balls

1 cup mejdool dates

1 cup raw almonds

1/2 cup raw cashews

1/4 cup cocoa powder

1 tsp. peppermint extract

1/2 cup chocolate chips (optional)

Directions:

Add the cashews and almonds to a food processor outfitted with an S blade.  Process until the nuts are finely ground.

Add remaining ingredients and continue processing until a sticky dough is formed.  It may take a couple minutes so be patient.

Note: If your dates are nice & soft and sticky there’s no need to soak them beforehand.  If they feel a bit dry, soak them in a bowl of warm water for at least 30 minutes, otherwise blending them may be troublesome.

Line a baking sheet with parchment paper.  Scoop the dough and form the balls rolling them in your hands to get dough packed together tightly.  I used a tablespoon measuring spoon to help keep them about the same size.  The tablespoon also helps you pack the dough into little balls. Place the balls on the parchment paper and add them to either your fridge or freezer to allow them to set.

That’s it! Store energy balls in an airtight container in the fridge for up to a week and you’re good to go.  Enjoy a couple whenever you need to satisfy your sweet tooth or just need a little boost of energy.

  • Mindy, these are really , really good! I liked them much more than I first thought I did, once they sat in the fridge for a while.. That allowed all the flavors time to meld together nicely. Mint flavoring is sometimes hard on my weird stomach so I also learned not to eat 3 at a time! One is perfect for me, though, and is really satisfying. Thank you! Keep up the great work!! <3
