Hi there, I’m Mindy and welcome to Belly Mind Soul! Here you’ll find clean eating recipes free of gluten, dairy, corn, and soy that will nourish your belly, along with tips, tricks, and musings intended to feed your mind and soul.

I know firsthand the power of the food we put in our bodies.  Many years ago I was eating fast food and candybars just like most everyone else.  And then I got sick…really sick.  Traditional medicine offered little to help, so I turned to food.  There the true healing began.  It was discovered that my body had a problem with gluten, dairy, corn, and soy.  This discovery, although extremely overwhelming for someone whose cooking experience consisted of frozen meatballs and pasta-roni, was life changing.  Suddenly I was feeding my body food that made it do a happy dance and steering clear of the food that had been causing World War III in my gut.

Although I know personally the healing power of food, I have also discovered over the last few years that it isn’t everything.  Our minds and souls need to be fed the good stuff just as much as our bellies.  And what exactly is considered food for the mind and soul will be different for everyone.  The trick is being still enough and giving ourselves the space to discover that.  On this site I’ll share what’s keeping my mind and soul inspired and hope it resonates with some of you as well.

By day I am an elementary school teacher living in Austin, Texas. Although I adore my job, my passion for nutrition led me to attend The Institute for Integrative Nutrition, where I received my holistic health coach certification. When I’m not in the classroom wrangling ragamuffins you can find me hiking, biking, kayaking, practicing yoga, or playing around in the kitchen.
